Awesome Mother’s Day’s Cake

I have the urge to have a slice of Pineapple Upside Down Cake. I remember enjoying this as a kid, when mom did baking instead of me.

The oven heated the house and it was unbearably hot when she baked the Pineapple Upside Down Cake. The scent of the baking filled each of the rooms in our apartment in Brooklyn New York and whet our appetite. There was no air conditioning at that time so we had to rely on the window fans.

I grew up in the place that Growing Up In Brooklyn was written. If you ever read the book you would know that everyone always got to know each other. The apartments were six on each floor and were three floors in my apartment house. We would know when someone came home from work by the sound of their foot stomp as they walked up the stairs.

Mom made the Pineapple Cake by following the baking instructions given to her by her mother. In those days everyone bake from scratch. There were no bake your own cake boxes in the stores and we had no supermarket at the time. We bought all of our food, including the fresh pineapple, in the corner grocery store.

There was no cake mix. The cake was baked from scratch. I never knew what ingredients she used, but it was always delicious and looked as good as it tasted.

This was a long time ago. My grandmother died soon after. She was amazing and I never stopped seeing her in my mind and loving her in my heart.

Getting back to the Pineapple Upside Down Cake, after my grandmother died, my mother took over the job of baking the cake and it was just as good. Actually it was delicious and I could not get enough of it. I think if I was allowed, I would have eaten the entire cake at one sitting. I never could figure out how the pineapple got to the top of the cake. This was kept a secret from me until I was old enough to figure it out by myself

I never baked an Pineapple Upside Down Cake, so i cannot give you the proper method of how it was made. But trust me, it was always delicious, looked great and I could never get enough of it. It tasted even better when topping it off with whipped cream and a cherry on top.
