Cajun food comes from the Acadians who were deported by the British in 1755. This deportation was known as “le Grand Derangement” and those people would go on to settle in Southern Louisiana. With an extreme change in climate, most of the dishes that they were used to cooking could no longer be made (they couldn’t source the ingredients). Therefore, they had to look elsewhere – thus a whole cuisine was born!
In short, this is a very varied and interesting cuisine, so it will give you options for a long time to come. It’s worth learning the seasoning!
Making Your Cajun Rub
To make your own Cajun rub, here is what you will need:
- 2 tablespoons garlic powder
- 2 tablespoons paprika
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon cayenne pepper
- 1 tablespoon dried thyme
- 1 tablespoon onion powder
You can then add this to all kinds of cooking. You might want to rub some on a piece of turkey for instance, or a piece of lamb.
Or how about making some Cajun jambalaya? This is a delicious jambalaya that contains no tomatoes and that is deliciously spicy. Brown some meat in a stock pot and then add the onion, celery, red bell pepper, and Cajun rub. You can cook this in a slow cooker and allow it to simmer. Place the rice inside the pot too for a delicious infused flavour!
