Cranberry-Nut Winter Cake
- 2 cups cranberries
- 1 cup chopped pecans or walnuts
- 1 cup brown sugar
- 2 eggs
- 1 cup white sugar
- 1 cup white flour
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- ½ cup melted butter
- 2 tablespoons water or milk
Start by preheating your oven to 350 degrees. Use butter to grease a medium sized baking or casserole dish.
Next, spoon the cranberries, nuts and brown sugar all over the bottom of the baking dish; this will be your topping on the cake.

To make the batter, start by whisking eggs in a large bowl until they are foamy. Stir in all remaining ingredients into the eggs until just combined. Pour the batter into the baking dish, making sure that the cranberries, nuts and brown sugar are not visible.
Bake in the oven at 350 degrees 40-45 minutes. The cake should be a light brown. Test by sticking the best kitchen utility knife into the center of the cake, it should come out clean! There are two delicious toppings you can use for the Cranberry-Nut Winter Cake; a Bourbon Whipping Cream or a Nutmeg Whipping Cream. Both flavors mesh beautifully with the ingredients found in the cake!
Bourbon Whipping Cream
- 2 cups heaving whipping cream
- 4 tablespoons white sugar
- 3 tablespoons bourbon
Use an electric mixer to whip the cream until soft peaks form. Gradually beat in the sugar a little at a time, making sure to keep the original consistency of the whipping cream. Once the sugar is combined with the cream gently fold the bourbon in. Keep cold until you are ready to serve!
Nutmeg Whipping Cream
- 2 cups heavy whipping cream
- 4 tablespoons white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground nutmeg
Beat all ingredients at once until soft peaks form.
To serve, simply place individual slices of the Cranberry-Nut Winter Cake on a dessert plate. Place a dollop or two of the whipped cream flavor of your choice on top.
