You knew it was coming. All that leftover turkey you’ve got laying around has got to be eaten. But you’re sick and tired of traditional leftovers. Or perhaps the holiday scavengers have consumed all your terrific side dishes. So now, you’re left with scraps. What to do? Yes, you can have turkey for breakfast. This happens to be a great recipe for those who aren’t into eating pork or beef breakfast meats.
Don’t be afraid to get creative. Dice the turkey meat into small chunks. In a bowl, combine the eggs, chopped onions, bell pepper, cheese and tomato. Add a splash of carnation milk (this makes the omelette fluffy.) Really, you can use any ingredients you like. Experiment with chopped spinach, broccoli, or other vegetables to give the omelette texture (and add a few extra vitamins.) Fold the diced turkey into the egg and prepare as usual. Yum Yum!
This recipe practically makes itself. Substitute the turkey for chicken, and you’ve got a great treat that will remind no one of Thanksgiving. With just some cheese, cilantro, onions, a few flour tortillas, and a George Foreman grill you can whip this up in seconds flat. Don’t forget all the fixings like sour cream and guacamole. This recipe is terrific for a Mexican-themed potluck luncheon.
Toss some of that leftover turkey breast into a food processor and chop finely. The ingredients for a typical risotto are Arborio rice, chicken stock (or in this case, turkey stock), onions, butter, lemon juice, Parmesan cheese, salt and pepper. Add frozen peas or other any other vegetables you enjoy. Those who are geniuses with risotto will find this an easy turkey transition to make. But if this particular recipe sounds a little intimidating, try your hand at this pretty easy version.
