Tasty Cookies Recipe Without Using Baking Soda

I’ve noticed these days that less and less people keep items in their houses meant for baking. I can’t remember the last time I had baking soda or powder in my cabinets or yeast for that matter; yet this doesn’t stop me from getting my late night sweet cravings. Usually I just ignore it but not too long ago I had a craving that just couldn’t be left unanswered. So, off to the kitchen I went to experiment with ways to make cookies and I must say, it didn’t end badly. So here is a recipe for yummy cookies for the person who can’t get to the store or just doesn’t have the supplies.

What you will need

  • 2 sticks of butter = 8 tbsp
  • 3/4 cup sugar = 12 tbsp
  • 1 egg
  • 2 1/4 cups of flour = 36 tbsp
  • 1/4 tsp of salt
  • 1 tbsp cinnamon (optional)
  • 1 tbsp peanut butter (optional)

Let’s make some cookies!

Preheat your oven to 350 degrees. First you need to soften your butter; I like to put it in a glass bowl and put it on top of the oven while I measure things out, this just makes it easier to mix if you’re doing it by hand. Use a hand mixer to mix your sugar into the butter and then the egg.

When it comes to the flour I like to mix in portions of it. I originally only had wheat flour and wasn’t sure how it would work out so I probably only used about 30 tbsp. I also included the salt in at this point but I’m sure you can do it when you want to. The peanut butter is completely optional, but there always seems to be an abundance of peanut butter in my house and never enough crackers so I try to put it in everything I bake. The cinnamon is also optional but my boyfriend loves cinnamon so I put it in. It’s only a hint but it’s delicious!

Put 1 heaping tbsp about 3 inches apart from each other and bake for about 9-11 minutes and you’re done! These are quick and easy cookies and took only about 5 minutes of prep. This recipe makes about 18 cookies (depending on how big you make them) and the great thing about them is that because there isn’t a lot to them there’s a lot you can do with them! You can easily experiment with your favorite flavors, like vanilla instead of peanut butter. The possibilities are endless. So, make yourself a batch and enjoy!
