A quarter of a pound of Italian sausage is the perfect substitute when a recipe calls for a half a cup of pepperoni. The sausage is milder and has less sodium too.

Then again if you want to get the task over with just add a teaspoon of flour to the dough to get it stiff enough to roll out. Sometimes the dough will require more than one teaspoon of flour. You have to work with it until the desired firmness is achieved.
