I am not sure where the name comes from. The original recipe (which I have altered some) was handed down to me from my sister in law. These were a family tradition when she and my husband were growing up.
I love easy baking. These bar cookies are ultra simple. And they taste rich. Cookies are good enough for gift giving and easy enough to make for family. The recipe is simple enough it could be used for baking with children given the minimal amount of ingredients and requirements for mixing. My husband doesn’t like coconut but he likes these cookies. So, give it a try even if you aren’t fond of coconut. Or omit the coconut and replace with nuts or fruit. You could use these as a “Clean out the closet” kind of a recipe.

Here are the basic requirements: Into a large bowl add: one box of light brown sugar creamed with it with three eggs. One box of brown sugar is about 2.5 cups of brown sugar. Add 2 cups of Bisquick, 1 cup of coconut and 1 cup of white chocolate chips. (you can also add nuts, we tend to omit them) Mix all ingredients well. Spread the mixture into a greased 9 x 13 pan. Bake in the oven for 30 minutes at 350 degrees. Let the bars cool and then cut them into 1 inch squares.
The bars should be slightly gooey and chewy in the middle with a slightly darker brown bottom and top.
- 1 box of light brown sugar (1 lb)
- 3 eggs
- 2 cups Bisquick
- 1 cup coconut
- 1 cup white chocolate chips
- nuts – optional (I don’t use them)
The last three ingredients are optional and could be omitted or replaced with other options.
The bars are easily stored in a sealed tin or plastic bag. They can be frozen for use later.
Side note: my daughter, she is five, is learning to use a bread knife and likes to practice cutting. She asked to cut the last batch of bars I made. She cut rows and left one large cookie in each row and the rest of the row was the small 1 inch sized bites. Asking her why every row had one large bar, she answered, “those are the queens!” This just might become a tradition in our house when baking bar cookies. I think each row of bar cookies will have a queen. And from experience, the queens have been eaten first! Serve warm on the best warming tray!
